Costa Vida Here At Home
Wow, can I tell you what, this dinner tonight was DELICIOUS!!!! Courtesy of my favorite fine meal planning program -
CHICKEN CILANTRO & ARTICHOKE SALAD
(yum, yum, yum, yum!!)
4-6 chicken breasts, pounded or thinned
(Salt, Pepper, 3 T olive oil)
(2 t minced garlic)
1/2 c. fresh chopped cilantro
Juice from one lime
4 oz. shredded cheese
8 oz. sour cream
Bag of salad
Grape tomatos
1 cucumber, peeled and chopped
1 jar marinated artichokes
Sprinkle chicken with salt and pepper. In non-stick skillet, heat oil on med-hi heat. Saute minced garlic for two minutes. Add chicken; cook 4-5 minutes on each side. Sprinkle with fresh cilantro; squeeze lime juice before serving. Top with shredded cheese and sour cream. (I am drooling just thinking about it again!- YUM!)
Toss salad, tomatos and cucumber with entire contents of artichokes, using marinade for dressing.
Enjoy and just devour! Marshall and I loved this cause it reminded us of our favorite place to eat - Costa Vida. Next time we might even make that yummy lime/cilantro rice to go with it - and you know there will be a next time! YUM!

I love the cilantro/lime rice. I wish I had cilantro on hand all the time.
